Honey Cake Mini-Muffins

These muffins will give you all the great flavors of honey cake in a bite size portion.

Ingredients

2 cups white whole wheat flour (or AP flour)

1 tsp. baking powder

½ tsp. baking soda

1 tsp. cinnamon

2 eggs

¾ cup honey

½ cup coffee (I use 3 tsp. decaf instant coffee & ½ cup water)

1 tbsp. coconut oil / vegetable oil

 

Small diced apples (optional)

Directions

  1. Preheat oven to 350 degrees.
  2. Grease your mini-muffin tin.
  3. In a small bowl, mix flour, baking powder, baking soda, and cinnamon
  4. In a large bowl, whisk together: eggs, honey, coffee, and oil
  5. Mix the flour mixture into the wet ingredients
  6. Add small diced apples if preferred. Apples will come out firm, but tender.
  7. Fill mini-muffin tins to the top.
  8. Bake for 12-15 mins.
